As elegant as it sounds, gardenscape focaccia is rather rustic, and making it at home is beyond simple – just top classic focaccia with seeds, herbs, edible flowers, vegetables, or whatever you find in the pantry. The dish is perfect for a rainy day, offering an escape to nature if we're confined home.
Our uber-talented food stylist Beatrice Prada prepared gardenscape focaccia during last year's lockdown. The herb- and vegetable-topped flatbread was an Instagram darling at this time last year, having since evolved into a springtime go-to.

Gardenscape focaccia recipe
Ingredients for the dough:
The foundation of this recipe is focaccia. To make one baking tray you’ll need:
12 oz. flour
1 Tbsp. fresh brewer's yeast (or a sachet of dry yeast)
1 cup lukewarm water
1 tsp. sugar
2 Tbsp. extra-virgin oil for the dough pls a drizzle of oil to grease the pan and to brush the surface
salt to taste

Method:
Combine the water with the sugar and yeast in a bowl. Let it dissolve, then add oil, flour, and salt and with a spoon, create the first mixture. Transfer the mixture onto a pastry board and work it by hand, forming a compact and uniform dough. Place the mixture in a bowl, cover it with plastic wrap or a clean cotton cloth and leave it to rest for about an hour and a half.
After the necessary time has passed, take out the dough and spread it onto the baking tray lined with oiled baking paper – grease your hands with some oil to help it stick better. Prick the surface with a fork and if necessary, season with a little more oil.
Bake at 450°F for 15 minutes and serve.
