In Italy, moka pot coffee is the preferred method for preparing espresso at home, so we’ve asked Dorotea Mercuri to share some tips.
The stovetop coffee gadget was invented by Alfonso Bialetti in 1933, and while the original design prevails, plenty of variations are on the market. Dorotea’s moka is decorated with the Italian flag and looks like it has poured thousands of cups of espresso.
First tip: To consistently make good espresso, never wash the moka with soap. Always rinse it with warm water.
In addition to the moka pot demonstration, Dorotea shares a lesser-known idea for enhancing the flavor: adding lemon zest to the espresso as they do on the Amalfi Coast, where fragrant, juicy lemons abound.
