- 1 LB. of ready-made polenta
- 12 OZ. of oil-packed baccalà (cod) fillets
- 12 of rolled anchovy fillets
- parsley
- milk
- extra-virgin olive oil

Cut out 12 squares (about 2" each) from the ready-made polenta. Brush with oil and cook on a hot griddle.

Drain cod fillets from oil and put in a blender. Add 1 Tbsp. oil and 3-4 Tbsp. milk. Blend until you obtain a smooth and uniform cream. Add 1 Tbsp. chopped parsley.

Place creamed cod on polenta crostini. Garnish with more chopped parsley and rolled anchovy fillets. Serve immediately.
