List of Ingredients
- 4 of veal chops (about 9 oz. each, bone in)
- 9 OZ. of fresh shelled fava beans
- assorted herbs (fennel, marjoram, rosemary)
- lemon
- mustard
- peanut oil
- extra-virgin olive oil
- salt
- pepper
Method

Blanch fava beans in plenty of boiling salted water for 2 minutes. Drain and plunge into iced water to cool. Drain and remove the skins.

Debone chops, season with salt and pepper and brush with mustard.

Brown veal in 3 Tbsp. hot peanut oil for 3 minutes on each side. Remove from heat and add 1 Tbsp. water and juice from 1/2 lemon to the pan. Return to a boil. Strain the sauce.

Dress fava beans with 2 Tbsp. extra-virgin olive oil, and sauté in a pan for 2 minutes with half the sauce.

Mince herbs and sprinkle on the chops. Top with cooking liquid and serve with the fava beans.
