Spaghetti aglio, olio, e peperoncino aka spaghetti with garlic, olive oil, and chili pepper is a classic pasta dish – and a preparation that's not just limited to the confines of Italian kitchens. It's saved many a world citizen on those nights when the pantry was empty or they just couldn't be bothered to prepare a complex dish. But for all its simplicity, aglio, olio, e peperoncino is delicious – and so treasured that some chefs have fused it into a risotto form.

Spaghetti aglio, olio e peperonico
3 oz/ 85 g. of spaghetti
1 tsp. red chili flakes (pepperoncini)
2 cloves of garlic
3 Tbsp. extra-virgin olive oil
1 bunch of fresh parsley
1 Tbsp. unseasoned bread crumbs
1 Tbsp. Parmigiano or Grana, grated
1 tsp. sea salt (for the boiling water)
